Pista Chickpea Hummus

Ingredients

  • 2 cups Pro V Regal Jumbo Pistachios
  • 1½ cups boiled chickpeas
  • 3-4 garlic cloves
  • 5-6 fresh parsley sprigs
  • Salt to taste
  • Crushed black peppercorns to taste
  • ½ cup extra virgin olive oil + to drizzle
  • Pickled carrot slices as required
  • Pickled cucumber slices as required
  • Pickled onion slices as required
  • Sliced black olives as required
  • Quartered cherry tomatoes as required
  • Toasted sourdough bread slices for serving

Method

  1. Peel Pro V Regal Jumbo Pistachios.
  2. Boil sufficient water in a nonstick pan, add pistachios and boil for 4-5 minutes. Drain and peel.
  3. Transfer boiled chickpeas in a processor. Reserve a few pistachios for garnish and add remaining pistachios. Add garlic, parsley, salt, crushed black peppercorns and extra virgin olive oil and process to a fine mixture.
  4. Transfer on a serving plate and spread in circular motion.
  5. Arrange pickled carrot, cucumber and onion slices on top.
  6. Place black olives, cherry tomatoes quarters and reserved pistachios on top.
  7. Drizzle extra virgin olive oil and serve with toasted sourdough bread slices.
